My very first comment on this blog was from my best friend in response to “What kind of recipes would you like to see on here?” She said “I love shrimp!” I finally got around to making shrimp this past Memorial Day weekend in this wonderful salad. My friend came over for our cookout and she told me she loved it (
and she’d better not be lying and I absolutely trust her!) Even my picky kid picked at it lol!
Shrimp with Papaya Salsa
2 pounds large cooked shrimp, tails removed and cut in half
1 large papaya, peeled, seeded and diced
1 red bell pepper, seeded and diced
1/2 of a red onion, finely chopped
1 jalapeno pepper, seeded and finely chopped
2 tablespoons cilantro, finely chopped
the juice of one navel orange
coarse salt, to taste
Combine all ingredients into a large bowl and add salt to taste. refrigerate overnight.
I’ll admit I wasn’t too sure how this would be with the shrimp, but I shouldn’t have worried! We all loved it! This one is a keeper!
