Homemade Ramen Noodle Soup

This hasn’t been the best week. My mother-in-law got the flu or some kind of bronchitis, and she’s one of those types that refuses to go to the doctor so she just got worse and worse, until my husband convinced her to go to urgent care. Once there they suggested she go to the ER, where she was finally admitted for dehydration and low oxygen levels. Come to find out that not only hadn’t she been eating, the only thing she was drinking for days was diet soda! Diet soda has no nutritional value whatsoever, at the hospital they have told her WATER, juice, Gatorade, even regular soda if she must. She’s still there, but getting better.

Before she ended up in the hospital, I caught the same flu or something. I had a fever for a day, sore throat, my ears hurt, and it’s since turned into a cough. The day I had the fever I decided to make homemade ramen noodle soup. I just happened to have the ingredients on hand, and since the only chicken I had was a whole frozen chicken, regular chicken noodle soup wasn’t happening. I needed something like it, though. I wouldn’t have been able to eat anything else I had available, or feel good enough to make it

Keep in mind I was sick and didn’t exactly measure everything, but I’m sure what I remember will be good :) Also keep in mind I wanted this done as quick as possible.

Homemade Ramen Noodle Soup

1 package Chinese Noodles

12-16 cups chicken broth ( two 32 ounce cartons and a 46 ounce carton)

2 carrots, peeled and large diced

2 stalks celery, large diced

2 scallions, ends removed and sliced fine including the green and white parts

1 clove garlic, minced

1 tablespoon soy sauce

1 teaspoon sesame oil

Bring the chicken broth to a boil in a large pot. Add the carrots, celery, scallions, and garlic. Reduce heat to medium ( it will still be boiling, just not as hard) and cook until vegetables are soft, then add in the noodles, soy sauce, and sesame oil. You can break up the noodles into bite size pieces or leave them long and eat them with a fork. Continue cooking for 3 minutes. Serve immediately.

Ok, it’s not the fanciest, best soup I ever made, but when you’re not feeling good and still need to make dinner, this was pretty good! My husband liked it, and even my daughter who doesn’t eat much ever loves long noodles, so she liked it!

  Reached a milestone on my Facebook page today reaching now over 200 likes! In honor of this I am going to do a giveaway that I will announce tomorrow. I’m excited! In the meantime, a little something about me.

  My name is Bernadette, and in 30 days I will turn 37 years old! Now I already know that anyone reading this under the age of 30 is thinking “Man, she’s OLD!” and anyone over the age of 45 is thinking “Oh, she’s so YOUNG!” Well, I don’t really feel either, although more old than young.

  Full confessional time: I’m skinny. I mean really skinny. I never mention this on www.facebook.com/MyCrazyKitchen because of the whole “Never trust a skinny cook!” thing. Of course my personal friends who have followed the page already know, but nobody else until now. So, why did I bring it up? Because my being skinny is genetic, my great-grandmother and great-aunt never weighed over 100 lbs. Oh, yeah, I’m around 90 lbs, and 5 ft 1 in tall. Most people are going to read this and think it’s wonderful that I inherited such good genes, and in a way it is:

1-My cholesterol is so low that I was told by my doctor I’ll never need to worry about it. I used to work at McDonald’s as a manager and ate it every day. Yep. Go me!

2-My blood pressure is also low, I’m not sure exactly but around 90 something over 60 something. It’s gone lower before, to the point where I tell the nurse taking it and looking concerned “Don’t worry, I’m alive!”

3-I can physically keep up with my almost 3-year-old, that’s always a plus! She has also inherited the skinny gene, and I hope to keep it that way. A skinny baby? Yep, there were some concerns when she was first born because she lost a bit too much weight right after birth, but after a few weeks of going to the pediatrician for weight checks, her pediatrician just admitted she was skinny like me. He was my doctor growing up!

  In another way it’s not so great, though. You see, I’m going to be 37 and I want to have another baby ( at least 1 ), and I don’t take care of myself. And I need to start, so I’m starting by publicly sharing everything I’m doing wrong and hopefully that will motivate me to do better!

  You see, because I’m skinny I don’t always eat right. I haven’t eaten breakfast on a regular basis in years, and then I don’t usually eat anything until lunch by which point I’m starving. Must learn to eat breakfast. Seriously. Lunch and dinner I normally do good and sometimes even healthy ( although I do sometimes have Ramen noodles for lunch. I know, full of salt.) I don’t snack on much during the day, but at night I love microwave burritos and they are horrible for me, too. So, I definitely need to start watching when and how I eat. I also have to start eating fruits, I’m lacking on those.

  There is more. I smoke cigarettes and drink alcohol way too much. Not the getting my child taken off of me kind of drinking, but enough that I know I have to cut down. Start drinking more water. Lately I’ve been doing good if I have a glass of water a day. I drink coffee, iced tea (both unsweetened, coffee black), and beer on a daily basis. An occasional glass of juice. Need more water. And less cigarettes. I’d like to quit altogether, and I’ll try to get there, but I’m not going to promise.

  I follow many great pages on Facebook that can encourage me on my journey towards eating healthier, and drinking more water via http://www.facebook.com/#!/HelpMomsonaHealthKick, so I’m sure I can do it, just need to start! Then hopefully another baby before I get too old to have another one!
