Ingredients
  • 3 pounds 85% lean ground turkey
  • 1 pound cannellini beans ,frozen or canned (drained and rinsed if using canned)
  • 3 tomatillos ,chopped
  • 3 small habaneros ,finely chopped
  • 2 garlic cloves ,minced
  • 1 large yellow onion ,chopped
  • 1 orange bell pepper ,chopped
  • 1 large carrot ,finely chopped
  • 2- 28 ounce cans crushed tomatoes
  • 1 can beer (domestic)
  • 5-6 tablespoons chili powder
  • 1 teaspoon dried thyme
Instructions
  1. Brown the ground turkey in a large stock pot over medium-high heat, drain. Add in the chopped vegetables, beans, crushed tomatoes, and beer. Stir in the chili powder and thyme.
  2. Bring to a boil, reduce heat, cover and simmer, stirring occasionally, for 2 1/2 hours. Serve with reduced fat tortilla chips and sour cream, if desired.
