    Extreme Ranch Chive Biscuits- Quick and easy biscuits made with ranch dressing and loaded with in-season fresh chives. Ready in less than 30 minutes, eat them while they are hot right out of the oven!

    The chives in my garden grew so much that I had to divide them into five separate bunches this year, and I still have plenty! They are great in these biscuits, or in scrambled eggs, or in lots of things like Chilled Chickpea Soup or on top of Bacon Cream Cheese Stuffed Cherry Tomatoes. I really haven't kept good track of what I put them in over the years, more like I just run out to the garden and snip some whenever they sound good.

    I don't normally make biscuits at home, and I wanted something easy to make. Something that didn't require a stand mixer, a lot of kneading, or a real specific way to mix the ingredients. and so I came up with a real simple, easy recipe that from start to finish takes less than 30 minutes to make. Best of all, it's delicious right from the oven! They will also keep well in a tightly sealed container for a few days. I recommend reheating them in the microwave, covered with a paper towel, for about 20 seconds before serving. Or devouring yourself, either way!

    Red Beet Horseradish Dipping Sauce- Perfect for dipping fried shrimp, chicken, or fresh veggies. Creamy, light, with a bit of heat!

    Spicy, creamy, and light, this Red Beet Horseradish Dipping Sauce is perfect for fried shrimp, chicken, or as a veggie dip!

    A few weeks ago my husband made a horseradish dipping sauce from Alton Brown to dip onion rings in. I thought a different version of it would be good with seafood like shrimp.

    Red Beet Horseradish Dipping Sauce- great for dipping shrimp. chicken, or fresh veggies!

    My husband and his uncle make red beet horseradish every year for Easter and Christmas. We serve it with kielbasi and cocktail shrimp at the holidays, but they make a lot of it and jar it so we have it all year long. I have no idea what the recipe is for it, since they make it at my husband's uncles house, but red beet horseradish is available in the refrigerated section of  grocery stores. Try to find one that the red beets are pureed in, not with whole pieces of red beets.

    Red Beet Horseradish Dipping Sauce

    Ingredients

    • 1 cup plain Greek yogurt
    • ½ cup prepared red beet horseradish
    • ½ teaspoon bacon salt try J&D's, see notes
    • 1 teaspoon lemon zest

    Instructions

    • Combine yogurt, prepared horseradish, bacon salt, and lemon zest in a small mixing bowl. Stir well, cover and refrigerate for at least 1 hour.

    Quick and easy homemade Chicken Lo Mein! So much better than waiting for Chinese take-out, this can be on your table in twenty minutes! With pieces of chicken, lo mein noodles, and fresh bell peppers, it's a great family weeknight dinner and much cheaper than take-out.

    I had a package of lo mein noodles sitting in my cabinet for awhile, so when my daughter asked for spaghetti this week, I said "How about chicken with noodles instead?" Great news, she ate it! Chicken and spaghetti are two of the very few things she likes, and luckily I have never had a problem getting her to eat vegetables. She also likes Chinese food, as long as it's not in a lot of sauce.

    I love most Chinese food myself, though I admit I don't order Chicken Lo Mein all that often. I'm more of a Chicken and Broccoli kind of girl, with Wonton Soup and Crab Rangoons, of course. Check out this recipe for Chicken and Broccoli I made a few years ago, and this fabulous recipe for Crab Rangoon Dip with Sesame Wonton Crisps. Yes, my photography has really improved! I need to update those photos, like yesterday.

    I made this quick and easy by using a package of frozen Asian vegetable mix, then just adding freshly sliced red bell pepper and minced garlic. The chicken itself only takes a few minutes to cook, and so do the noodles. I really don't think this could be easier, plus it saves a ton of money not ordering. Take-out is expensive!

    Chicken Lo Mein

    Quick and easy Chicken Lo Mein, ready in 20 minutes!

    Ingredients

    • ¾ pound chicken breast ,cut into bite size pieces
    • 8 ounces wide Lo Mein noodles
    • 1 package frozen Asian vegetable mix
    • 1 red )or any color bell pepper) sliced into thin strips
    • 1 clove garlic ,minced
    • 3 tablespoons stir-fry sauce
    • 1 tablespoon reduced sodium soy sauce
    • 2 tablespoons sesame oil divided, plus a little extra for the pasta water

    Instructions

    • Cook the Lo Mein noodles according to package directions, adding a few drops of sesame oil to the cooking water. Drain, and rinse under cold water. Set aside.
    • Heat 1 tablespoon sesame oil over medium-high heat in a wok or large, deep saute pan. Cook the chicken until lightly browned on all sides, remove to a plate. Add the remaining tablespoon sesame oil to the pan. Saute the bell pepper, vegetable mix, and garlic, stirring often, until the vegetables are hot and cooked through.
    • Add the chicken back to the pan, stir in the noodles, stir-fry sauce, and soy sauce, simmer until hot. Serve immediately.

    Today, April 29, is National Shrimp Scampi Day! Shrimp Scampi is one of my favorite things to make, and eat! I just love that there is a food day for it! So, I put together a small collection of some great recipes to share with you. I can't wait to hear which is your favorite!

    Shrimp Scampi Day Recipes

    10 Shrimp Scampi Recipes- April 29 is National Shrimp Scampi Day, and this collection includes recipes from traditional shrimp scampi to non-traditional like quesdillas and pizza!

    Now, there is traditional Shrimp Scampi made with a garlic butter sauce, like my Shrimp Scampi with Linguine, but there are also so many other ways you can enjoy it. Pizza, dip, quesadilla's, even different variations on the classic. Don't they all look so good? I'm definitely going to be making that dip!

    If you don't like the butter and garlic, but still love shrimp, can I suggest Spicy Shrimp and Bacon Casserole, one of my all time favorites, or how about Coconut Shrimp with Tomato Coconut Salsa? Don't like shrimp at all? I have a handy search bar where you can search for recipes by entering a main ingredient, and everything I've made with that ingredient will be displayed.

    Tomorrow, April 23 is National Picnic Day. I haven't been on a picnic in a long time, but these recipes make me want to plan one!

    Fried chicken, pasta salads, easy desserts, all of these recipes are great for a picnic! Seriously, these are going on my recipes to try list, and I'm positive I will love these picnic recipes! Okay, the Broccoli Cheddar Pasta Salad and Avocado Sriracha Egg Salad are my own recipes, but the others.  It's finally just starting to get nicer out here, although the next few days are supposed to be cold. I've been thinking a lot about what we are going to do this summer, and eating outside, whether a picnic or cookout, is definitely going to be on the list a lot of days. It's so much easier than trying to make my daughter come inside when it's so nice out. Plus, I don't really enjoy being stuck inside cooking in the summer either.

    I've also been busy! I'm preparing to go to the Food and Wine Conference this summer, and am excited to finally meet my foodie friends in person.     Avocado Sriracha Egg Salad- Take egg salad to a whole new level with the addition of avocado, sriracha sauce, and crispy bacon! Great on it's own, or as a sandwich.

    Let's celebrate Earth Day, April 22nd, and National Picnic Day, April 23rd, with recipes great for an outdoor picnic! This Avocado Sriracha Egg Salad takes a basic egg salad to a whole new, deliciously fabulous level!

    Thanks to our great host T.R. from Gluten Free Crumbley for hosting this week's #SundaySupper featuring great picnic recipes! Sad to say, but I think I've only been on a picnic maybe three times in my life. I remember making sandwiches to take to a park with a boyfriend when I was a teenager, but I'm sure it wasn't anything special.

    Here is another sad fact, I've never liked egg salad. Like, not at all. I never really understood why, because I like everything that goes into a basic egg salad. I think I just didn't like the combination. But, we had tons of hard-boiled eggs leftover after Easter, so I decided to try to find a way I would like egg salad. This is it!

    Avocado Sriracha Egg Salad for Picnic #SundaySupper

    I decided to add avocado, because I love it, and then bacon would give it a nice, salty flavor, then add a bit of spice to the egg salad by adding sriracha sauce. It's not overly spicy, though, just enough to give it a little "kick". If you like spicy, add an additional teaspoon sriracha at at time, and taste before adding more.

    If picnics or cookouts aren't in your plans, you can make it the night before, and cover it tightly, and then make a quick and easy breakfast bagel sandwich in the morning.

    Avocado Sriracha Egg Salad

    With avocado, sriracha sauce and bacon, this egg salad is delicious as a side dish, or makes a great breakfast sandwich. Never have boring egg salad again!

    Ingredients

    • 6 hard-boiled eggs ,peeled and chopped
    • 3 slices reduced sodium bacon cooked crisp, drained, and crumbled
    • 1 scallion ,sliced thin (white and green parts)
    • ½ of an avocado seeded, peeled, and chopped
    • ¼ cup finely chopped celery
    • 3 tablespoons plain yogurt
    • 1 ¼ tablespoons mayonnaise
    • 3 teaspoons sriracha sauce
    • 1 teaspoon lemon juice

    Instructions

    • Combine chopped eggs, crumbled bacon, scallion, avocado, and celery in a medium mixing bowl. Drizzle with lemon juice, then stir in the yogurt, mayonnaise, and sriracha sauce.
    • Cover tightly and keep cold until serving.

    Notes

    Cook time denotes cooking the bacon.

    I'm not going to give you an exact pizza recipe this time, I'm just going to share a quick and easy homemade whole wheat pizza dough recipe that I've been making recently, but if you are looking for ideas on what to top the dough with, I will share a few right before the recipe. 

    Whole Wheat Pizza Dough made with Italian herbs and seasonings. Healthy doesn't have to mean bland with this quick and easy recipe!

    I think that this may be the first recipe I've ever shared that is simply the base for a recipe, and not the entire recipe. It came about after I bought too much whole wheat flour, for something I can't remember, and I wanted to use it up. We have been eating a lot more whole wheat and whole grain breads and pastas, but they have been store-bought. I've also been making pizza at home a lot more, and with the exception of Victory Pig Sicilian Style Pizza  they have been pretty healthy. Veggies, lower fat cheeses, you get the idea. This particular one has turkey pepperoni on it, and nobody here can tell the difference between it and regular pepperoni!

    How to make Whole Wheat Pizza Dough with Italian Herbs 

    I start out by mixing the flour, quick-rise pizza yeast, Italian seasoning, garlic powder, onion powder, oil, and hot water in a bowl, then kneading it for a few minutes, adding additional flour as needed to keep the dough from being sticky.

    Then press it out into an oiled baking sheet or pizza pan.

    That's it! Top with desired pizza toppings and bake for 12-15 minutes. Keep an eye on it after 12 minutes, so the crust doesn't stick to the pan.

    Like I said, we love turkey pepperoni, vegetables like thinly sliced bell peppers, chopped tomatoes, spinach, and red onions. You can use reduced fat cheeses as well, but keep in mind that they don't melt as well as full fat cheese.

    Whole Wheat Pizza Dough with Italian Herbs

    Ingredients

    • 1 ½ cups whole wheat flour plus additional if needed
    • 1 package Fleischmann's pizza crust yeast
    • ⅔ cup very warm 120-130 degree F water
    • 1 ½ teaspoons sugar
    • ½ teaspoon salt
    • 1 teaspoon Italian seasoning
    • ¼ teaspoon garlic powder
    • ¼ teaspoon onion powder
    • 6 tablespoons canola or olive oil ,divided

    Instructions

    • Combine 1 cup of the flour, dry yeast, sugar, salt, Italian seasoning, garlic powder, and onion powder in a mixing bowl. Stir in water and 3 tablespoons oil. Mix well. Turn out onto a clean surface dusted with ½ cup flour, and knead, incorporating the dusting flour and adding more if needed to keep it from being overly sticky, for 4 minutes.
    • Preheat oven to 425 degrees F. Press out dough into a pizza pan, drizzle olive oil on top, top with desired toppings, and bake in the preheated oven for 12-15 minutes, or until cheeses are melted and crust is golden brown.
